Chocolate Pear Barquettes: A recipe from Mimi Thorisson

Pears are coming into perfection in Provence in the month of June. I came across a recipe including pears from the amazing Mimi Thorisson in the French version of Elle and immediately wanted to try it.
This recipe is perfect for a moment where one can walk out into the yard and pick fresh pears...but even if you haven't got a pear tree, purchased pears will do well. The variety I used for this recipe is indeed straight from my tree in my garden in Aix-en-Provence, France. As Mimi recommends, pears that are still crisp work particularly well for this dessert. 

 

Barquettes chocolat-poires de Mimi Thorisson

Ingredients

Chocolate shortcrust pastry

* 3/4 cup all-purpose flower

* 1/4 cup of icing sugar

* 1/2 tablespoon of cocoa powder (70%)

* 1 egg yolk

* 1/2 teaspoon vanilla extract

* 1/4 cup butter cut into cubes (approx. 4 tablespoons)

* 1 pinch of salt 

For garnish

* 2 pears

* 1 tablespoon of sugar

* 2 tablespoons maple syrup

 How to

1. Preheat the oven to 390°F

2. Sift the flour and make a well in the middle. Pour in the salt, sugar, cocoa powder, egg yolk, vanilla, just softened butter and 2 tablespoons of iced water. Knead with your fingertips to obtain a soft dough. Form a ball and leave to rest for 1 hour in the refrigerator.

3. Roll out the dough and place it in the molds. Prick with a fork.

4. Cut the pears into thin slices and garnish the trays with them. Sprinkle each with a pinch of sugar.

5. Add a brush of maple syrup and bake for 15 to 20 minutes.
